The BEST Tzatziki

Ingredients

  • 500g Greek yogurt
  • 1 large cucumber
  • 3 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh mint, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp salt
  • Black pepper

Instructions

  1. Grate the cucumber and place in a colander. Sprinkle with salt and let drain for 10 minutes.
  2. Squeeze out as much liquid as possible from the cucumber using your hands or a clean tea towel.
  3. In a medium bowl, combine Greek yogurt, drained cucumber, garlic, dill, and mint.
  4. Add lemon juice and olive oil. Mix well to combine.
  5. Season with salt and pepper to taste. Mix again.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Serve with grilled meats, vegetables, or as a dip with pita bread.
