Ingredients
- 600g chicken breast fillets, sliced
- 2 tbsp olive oil
- 8 cloves garlic, minced
- 1 cup chicken stock
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 2 tbsp fresh parsley, chopped
- Salt and pepper
- Mashed potatoes, to serve
- Green beans, to serve
Instructions
- Season chicken with salt and pepper. Heat oil in a large pan over medium-high heat.
- Cook chicken for 5-6 minutes until golden and cooked through. Remove and set aside.
- Add garlic to the same pan and cook for 1 minute until fragrant.
- Pour in chicken stock and bring to a simmer. Cook for 2 minutes.
- Add cream and parmesan. Stir until cheese is melted and sauce is smooth.
- Return chicken to the pan and simmer for 2-3 minutes until heated through.
- Stir through parsley and serve immediately with mashed potatoes and green beans.
