Ingredients
- 150g rocket (arugula)
- 50g parmesan cheese, shaved
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and black pepper
- 1/4 cup pine nuts, toasted (optional)
Instructions
- Wash and dry the rocket leaves thoroughly.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Place rocket in a large salad bowl. Drizzle with half of the dressing and toss gently.
- Add shaved parmesan cheese and toss again.
- Drizzle with remaining dressing if desired.
- Sprinkle with toasted pine nuts if using and serve immediately.
