Rocket (Arugula) and Parmesan Salad

Rocket and Parmesan Salad

Ingredients

  • 150g rocket (arugula)
  • 50g parmesan cheese, shaved
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and black pepper
  • 1/4 cup pine nuts, toasted (optional)

Instructions

  1. Wash and dry the rocket leaves thoroughly.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  3. Place rocket in a large salad bowl. Drizzle with half of the dressing and toss gently.
  4. Add shaved parmesan cheese and toss again.
  5. Drizzle with remaining dressing if desired.
  6. Sprinkle with toasted pine nuts if using and serve immediately.
