Perfect Steak with Peppercorn Sauce

Ingredients

  • 2 sirloin or ribeye steaks (200g each)
  • 1 tbsp black peppercorns, crushed
  • Salt
  • 2 tbsp butter
  • 2 cloves garlic, crushed
  • 1/2 cup beef stock
  • 1/2 cup heavy cream
  • 2 tbsp brandy (optional)
  • Fresh thyme

Instructions

  1. Let steaks come to room temperature. Season both sides with salt and crushed peppercorns, pressing them into the meat.
  2. Heat a heavy-based pan over high heat. Add 1 tbsp butter. Once hot, add steaks.
  3. Cook for 3-4 minutes on one side (for medium-rare), then flip and cook for another 2-3 minutes.
  4. Add garlic and thyme to the pan for the last minute. Remove steaks and let rest for 5 minutes.
  5. Reduce heat to medium. Add brandy (if using) and let it reduce by half.
  6. Add stock and cream. Simmer for 2-3 minutes until sauce thickens slightly.
  7. Stir in remaining butter. Serve steaks with the peppercorn sauce drizzled over.
